For those of you who tuned in to watch us LIVE on Instagram, thank you! In case you missed it, we made sweet potato muffins that were delicious. I'm not going to lie, I was surprised at how good they were!

It seems to be the time of the year where everyone is seeking healthier alternatives and quick and easy snack ideas. These muffins couldn't be more spot on. ​Below is the recipe if you want to give it a try yourself. Tag me if you do so I can see your sweet (potato) treats!

Ingredients:

•  1 cup sweet potato mashed up
• 1/2 cup of maple syrup (or you can sub out for honey)
• 2 eggs
• 2 tbsp of melted butter
• 1 tsp of vanilla extract
• 1 cup of almond flower
• 1 1/2 tsp of baking soda
• 1/2 tsp of salt
• 1 tsp of cinnamon
• 1/4 tsp of nutmeg (optional)

Directions:

• Preheat oven to 375
• Mix wet ingredients in one bowl
• Mix dry ingredients into a separate bowl (stir)
• Slowly mix dry ingredients into the wet ingredients
• Pour batter into muffin tin and fill 2/3 full
• Bake for 15 minutes (keep refrigerated)
