sweet potato and ground turkey CASSEROLE with le creuset

It has always been a dream of mine to open my kitchen cabinets and see them filled with Le Creuset cookware! So when they recently launched their latest color, Gris, a sophisticated neutral, I knew it was meant to be. You won't find vibrant or bold colors throughout my home so I can't tell you guys how PERFECT this color is for me and my kitchen.

Le Creuset is a durable, high quality cookware that allows you took cook faster with 30% less energy! The color Gris, was inspired by historic French interiors (I'm dying!) and has subtle hints of taupe and rose. You can NOW find their latest color at any of their outlets. SO without further ado... Sweet Potato and Ground Turkey Casserole!

Ingredients:
  • 1 package of lean ground turkey
  • 1 cup of chopped onions
  • 3 tsp of butter
  • 1/2 package of taco seasoning
  • 2 large sweet potatoes
  • 2 cups of shell noodles (I use ancient harvest)
  • 1-2 cups of shredded cheddar cheese

Directions:
  • Turn your oven on broil.
  • Begin to cut your sweet potatoes into square bites (I peeled 90% of the skin off). Place in the oven for 45 minutes or until softened.
  • In your Le Creuset Dutch Oven, cook your shell pasta on low-medium heat and then place off to the side (I added 1 tbsp of olive oil to prevent my noodles from sticking but not necessary). Rinse!
  • In your Le Creuset Dutch Oven, begin to cook your ground turkey meat over medium-high heat into fine chopped pieces, adding in your onions and taco seasoning to brown (you could literally season your meat with almost anything. I just love taco seasoning, personally).
  • Once your sweet potatoes have softened, take your rectangle Le Creuset Deep Dish and place half of the bite sized sweet potatoes as the 1st layer.
  • Microwave your butter and pour it over your sweet potatoes.
  • Add in about half of your turkey meat and shell noodles.
  • Then add in the remaining sweet potatoes, turkey meat, and noodles.
  • Sprinkle cheese and then bake for 20-25 minutes.
  • Once you've baked your casserole, you can keep it layered or mix it up. Enjoy!
