organic carrots with candied pecans paired with pure gold by michelob ultra

Ingredients:
  • 2 lbs of peeled carrots
  • 1/2 cup of brown sugar
  • 4 tbsp of unsalted butter
  • 1 tsp of salt
  • A pinch of salt and cinnamon
  • 4 ounces of goat cheese crumbled (optional)
  • 1 tbsp fresh thyme leaves to garnish (optional)
​Candied Pecans:
  • 2 tbsp of unsalted butter
  • 3 tbsp of (sugar free) maple syrup
  • 1 tbsp of brown sugar
  • 1 cup of chopped pecan halves
  • 1/4 tsp of sea salt

Directions:
  • ​Preheat oven to 350.
  • Line the baking dish with foil. Place a single layer of peeled carrots into the baking dish. Sprinkle the brown sugar, salt, cinnamon, and evenly distribute the butter.
  • Place in the oven for about 60 minutes until carrots are tender. Try and rotate carrots a few times while baking.
  • Time to prepare the candied pecans!
  • In a small pan, melt the butter over low heat. Once the butter is melted, add in the maple syrup, brown sugar, and pecans. Stir every 2 minutes until sauce thickens.
  • Remove candied pecans from heat and sprinkle sea salt. Set aside!
  • One the carrots are cooked, put them in a serving dish. Sprinkle in the candied pecans and goat cheese (yum)!
  • Optional to add fresh thyme leaves to garnish!
